Metodología: se efectuó un estudio de tipo cualitativo descriptivo utilizando la técnica de grupo focal, en las familias de las comunidades de Alajuela Centro y Piedades de Santa Ana. Se realizaron entrevistas con el personal de salud que labora en los Equipos Básicos de Atención Integral en Salud de esas mismas comunidades. Resultados: los conocimientos sobre la carne de pollo son escasos y se limitan al contenido de proteínas y grasa. En lo concerniente a opiniones sobre las razones de consumo, están ligadas a las ventajas que ofrece este alimento: versatilidad, fácil digestión, el aspecto económico y de salud. Los principales motivos de no consumo fueron referentes al contenido de hormonas y aspectos de contaminación microbiológica. Conclusiones: los limitados conocimientos de la población están relacionados con la poca información que asegura tener el personal de salud que, por tanto, no transmite recomendaciones suficientes y pertinentes. Las razones para no consumir pollo no son determinantes en la decisión de compra de dicho producto, pues los principales criterios de selección son la frescura de la carne y el factor económico.</p></abstract>
<abstract abstract-type="short" xml:lang="en"><p>Objective: To determine knowledge and opinions regarding chicken meat in families and health personnel of two Costa Rican communities, an urban one and a rural one, during the period 2007-2008. Methodology: A qualitative-descriptive study was undertaken using the technique of focal groups as well as interviews to the families and health personnel of the communities of Alajuela and Piedades de Santa Ana. Results: Knowledge about chicken meat is limited to the content of protein and fat. In relation to opinions about the reasons for consumption, those mentioned had to do with the advantages that this food offers: namely, easy digestion, the economic aspect, the health factor and that chicken can be prepared in a multitude of ways. The main reasons for not eating chicken were related to the hormonal content as well as the risk of microbiological contamination. Conclusions: The limited knowledge of the population is related to scary information that the health personnel say they have and, therefore, the latter don’t transmit sufficient and pertinent recommendations. The reasons not to consume chicken meat are not determination in the decision to purchase, because the main criteria for selection are the freshness of the meat and its cost.</p></abstract>

Materiales y Métodos: Estudio exploratorio cuantitativo. Se encuestaron a 369 personas durante los meses de junio a agosto del 2009. Se efectuó un análisis descriptivo de las principales variables registradas para determinar la Calidad de la Gestión en el Laboratorio de Hematología del Hospital México. Resultados: La satisfacción del Cliente Externo (Médicos, Enfermeras y Usuarios Consulta Externa) opinan que es oportuno con un 94,1 %(269/286), por otra parte el trato y la calidez resultaron buenas con un 86,4 % (247/285) y un 82,9 %(237/285) respectivamente. El Cliente Interno (Microbiólogos, Técnicos y Personal administrativo), un 64,0 %(16/25) microbiólogos consideran que las expectativas laborales son buenas, el mayor porcentaje de los técnicos con un 71,4 %(30/42) han recibido menos de 10 capacitaciones, en el personal administrativo prevalece la necesidad laboral con un 56,3 %(9/16). En cuanto al espacio físico la mayoría de los Clientes Internos lo consideran regular. Prevalece la opinión de los Técnicos y del Personal Administrativo del mobiliario que es considerado como bueno, no así los Microbiólogos con un 56,0 %(14/25) opinan que es regular. Conclusión: La satisfacción del Cliente Interno y Externo debe ser evaluada para mejorar la Gestión de la Calidad en el Laboratorio Clínico del Hospital México.</p></abstract>
<abstract abstract-type="short" xml:lang="en"><p>Objective: To evaluate the Quality of Clinical Laboratory Management in the Hospital México, between the months of June through August, 2009. Materials and Methods: The design of the study was quantitative and exploratory. 369 people were surveyed during the months of June through August of 2009. We performed a descriptive analysis of the main study variables to determine the quality of management in the hematology laboratory of the Hospital México. Results: External Customer Satisfaction (Doctors, Nurses and Outpatient Users) believe the service is appropriate with a 94,1 % (269/286); on the other hand, empathy and human warmth were good with a 86,4 % (247/285) and 82,9 % (237/285) respectively. The Internal Customers (microbiologists, technicians and administrative staff), a 64,0 % (16/25) of microbiologists believe that job prospects are good as well as a high percentage of technicians with a 71,4 % (30/42) who have received less than 10 training sessions; administrative staff have a prevailing business need with a 56,3 % (9/16). Regarding the physical space, most of the internal customers consider it mediocre. The prevailing opinion is that of the Technical and Administrative Staff regarding the furniture which is considered good, but not the microbiologists with 56,0 % (14/25) who consider it rather mediocre. Conclusion: The satisfaction of internal and external customers should be evaluated to improve Quality Management in the Clinical Laboratory of the Hospital México.</p></abstract>

Métodos: El diseño es transversal. La población la conformaron 875 hombres y mujeres que laboraban en cualquier turno. Se aplicaron dos instrumentos, la Escala de Valoración de Maslach Burnout Inventory, y el Inventario de Recursos Sociales de Díaz Veiga modificado. El análisis consistió principalmente en el determinar las posibles asociaciones entre las variables de estudio. Resultados: La prevalencia del Síndrome de Burnout fue del 54,9 %, las redes sociales fueron catalogadas de muy buenas a regulares y las asociaciones fueron significativamente positivas entre ambas variables. Discusión: Se llega a la conclusión de que pese a la muy buena red de apoyo que se reportó, parece ser que éstas no fueron lo suficientemente contundentes, sobre todo en el aspecto objetivo y el síndrome, por lo que alguna estrategia de solución deberá ser implementada de manera individual, grupal y organizacional.</p></abstract>
<abstract abstract-type="short" xml:lang="en"><p>Objective: This study was geared towards determining the relationship between social support networks and burnout syndrome of traffic agents in a city of Mexico. Methods: The design was cross-sectional. The population consisted of 875 men and women who were working at any shift. Two instruments were applied, the Maslach Burnout Inventory valuation scale, and the modified Social Resources Inventory by Diaz Veiga. The analysis was focused on possible associations between the studied variables. Results: The prevalence of burnout syndrome was 54,9 %; social networks were rated from very good to mediocre and the associations between both variables were significantly positive. Discussion: It was concluded that despite the very good support networks reported, it appears that the latter were not sufficiently strong, especially in the objective aspect and the syndrome, so that any strategy for solution should be implemented on an individual, group and organizational basis.</p></abstract>

Objetivo: Describir y analizar la situación epidemiológica de la influenza y apoyar el fortalecimiento de su sistema de vigilancia. Métodos: Estudio descriptivo retrospectivo. Se calculó incidencia, riesgo relativo (RR), intervalo de confianza al 95 % (IC 95 %) y número de egresos con sus promedios móviles, tasas de egreso hospitalario de influenza y neumonía. Fuentes de datos: los registros de notificación colectiva del Ministerio de Salud, la base de datos de egresos hospitalarios del Seguro Social y los registros de la vigilancia centinela del Centro Nacional de Influenza. Resultados: La incidencia anual mostró tendencia al aumento (R2 = 0,9) con picos en marzo a abril, junio a septiembre y agosto a diciembre. Las tasas anuales de egreso hospitalario mostraron tendencia a disminuir (R2 =0,9) con picos en marzo a mayo, julio a septiembre y septiembre a octubre. El pico de aislamientos del laboratorio se presentó en el segundo semestre de cada año, más frecuente en los meses de julio, agosto y septiembre. Discusión: Se cotejaron los datos de la vigilancia, los egresos hospitalarios y el laboratorio, los resultados no fueron suficientes para concluir si la influenza muestra estacionalidad. Se sugiere realizar un estudio del sistema de vigilancia de influenza para mejorar la calidad y el registro de los datos ya que es fundamental conocer la estacionalidad de la influenza y sus cambios para respaldar las intervenciones correspondientes y sus modificaciones.</p></abstract>
<abstract abstract-type="short" xml:lang="en"><p>Influenza causes approximately 3,5 million cases of severe illness each year worldwide. Objective: To describe and analyze the influenza epidemiological situation in the past four years in order to support enhancement of the influenza surveillance system in Costa Rica. Methods: A descriptive, retrospective study was conducted. Incidence and hospital discharge rates were calculated. Sources of data were: collective notification forms of the Ministry of Health, the hospital discharge data base of the Costa Rican Social Security system as well as the influenza surveillance forms of the National Influenza Center. Results: Since 2005 collective information has been gathered monthly, by province, by age-groups and sex. From 2005 through 2006, the highest rates were found in the months of March and May. Regarding hospital discharges, mobile averages showed that a peak was reached between June and September. Laboratory diagnoses were highest during the months of July through September. Discussion: Collective notification is higher in the first semester; nevertheless, hospital discharge rates are higher between June and September which match the peak reached by laboratory diagnoses for influenza virus; this may suggest seasonality but there is a lack of robust data to confirm this; therefore, we suggest conducting further seasonality studies. This study supports the development of guidelines for the influenza surveillance process in Costa Rica.</p></abstract>

Metodología: se efectuó un estudio de tipo cualitativo descriptivo, en las comunidades de Alajuela Centro y Piedades de Santa Ana, con 18 y 24 familias respectivamente. Además, se trabajó con personal de salud que labora en los Equipos Básicos de Atención Integral en Salud de esas mismas comunidades. Resultados: existe diversidad de preparaciones, ingredientes y métodos de cocción. Los lugares de compra corresponden a lugares pequeños o &quot;de confianza&quot; en el área urbana, y supermercados en el área rural. Los criterios de elección del pollo en el momento de la compra son principalmente el precio y la frescura, determinada por el color de la carne y el olor. Las prácticas de almacenamiento en general son adecuadas, no así la forma en que se descongela. Conclusiones: la diversidad de ingredientes y formas de preparación está ligada a la disponibilidad de cortes en el mercado. Se pudo constatar un grado de esconocimiento importante en cuanto al descongelamiento del pollo, lo cual podría estar ligado a la limitada información que reciben las amas de casa en este sentido. Aunque se percibe como desventaja de la carne de pollo el posible contenido de hormonas y el riesgo de contaminación microbiológica, los criterios de compra son principalmente el aspecto económico y la frescura de la carne.</p></abstract>
<abstract abstract-type="short" xml:lang="en"><p>Objective: To determine consumption, purchase, storing and cooking practices used for chicken in families and health personnel from two Costa Rican communities, one urban and one rural, in the period 2007-2008. Methodology: A qualitative-descriptive study was undertaken, using focal groups and interviews with families and health personnel from the communities of Alajuela and Piedades de Santa Ana. Results: A diversity of preparations, ingredients and cooking methods were observed. The principal sites of purchase in the urban area are those which inspire confidence among shoppers, and supermarkets in the rural area. The main criteria for selecting chicken at the moment of purchase are price and freshness of the product, this in turn being determined by the color and odor of the meat. Conclusions: The diversity of ingredients and forms of preparation are related to the availability of different chicken parts in the market. An important lack of knowledge was detected, regarding the correct way to thaw frozen chicken, and this could be related to the limited information that people receive. Although the possible hormone content and the risk of microbiological contamination are perceived by the population as a disadvantage, the main criteria used when purchasing are the cost and freshness of the meat.</p></abstract>

Materiales y Métodos: Los alimentos que se consumen cocidos, se cocieron a la manera usual de consumo del costarricense y se les determinó la humedad. La digestión de las muestras se realizó en horno de microondas y se cuantificó el contenido de magnesio por espectroscopía de absorción atómica de llama. La validación de la metodología se realizó con disoluciones patrón de magnesio trazables a la NIST® y con materiales de referencia certificados trazables. Resultados: El ámbito de linealidad óptimo que se obtuvo fue de (0,021-0,65) mg/L con un coeficiente de correlación de 0,992. Los límites de detección y cuantificación reportados fueron de 0,021 mg/L y 0,037 mg/L, respectivamente. La sensibilidad de calibración fue de 0,688 ALmg-1 y la sensibilidad analítica fue de 215 Lmg-1. La precisión se evaluó en condiciones de repetibilidad, se obtuvo un valor para RDSr igual a 1,1 %. La veracidad se determinó utilizando tres patrones certificados de la NIST®, SRM 1846 Infant Formula con un valor reportado para magnesio de (538±29) mg/kg, SRM 1846 Bovine Muscle Powder con un valor reportado para magnesio de (960±95) mg/kg, y SRM 8415 Whole Egg Powder con un valor reportado para magnesio de (305±27) mg/kg en masa, en los tres casos se obtuvieron sesgos de -0,0014 mg/L en promedio Discusión: Se analizaron 46 alimentos seleccionados de la canasta básica alimentaria del costarricense, frescos o cocinados a la manera habitual de consumo, sin adicionarles aditivos. Los alimentos con contenido de magnesio cuantificable fueron: leguminosas (garbanzos, lentejas, frijol negro y rojo), granos y cereales (arroz blanco y precosido), productos lácteos (leche entera en polvo, queso mozzarella, queso fresco), verduras y hortalizas (camote, ajos, plátano maduro), granos (frijoles, lentejas, garbanzos), carnes (tilapia, pechuga de pollo, lomo e hígado de re), frutas (banano criollo y de exportación), productos industrializados (pan a base de harina de trigo y tortillas de maíz).</p></abstract>
<abstract abstract-type="short" xml:lang="en"><p>Objective: Analytical methodology was validated for the determination of magnesium in foods by atomic absorption flame spectroscopy. Material and Methods: Foods that are eaten cooked were baked in the usual manner of consumption in Costa Rica, and samples were taken for moisture determination. The digestion of the samples was made in a microwave oven and magnesium content measured by atomic absorption flame spectroscopy. Validation of the methodology was carried out using magnesium standard solutions traceable to NIST ® and certified traceable, reference materials. Results: The linearity range was (0,021 to 0,65) mg/L with a correlation coefficient of 0,992. The detection and quantification limits obtained were 0,021 mg/L and 0,037 mg/L, respectively. The sensitivity calibration was 0.688 ALmg-1 and the sensitivity was 215 Lmg-1. The accuracy was evaluated in terms of reproducibility, the RDSr value was 1.1 %. The accuracy was determined using three standards certified by NIST ®, SRM 1846 Infant Formula with a reported value for magnesium (538 ± 29) mg / kg, SRM 1846 Bovine Muscle Powder with a reported value for magnesium (960 ± 95) mg / kg, and SRM 8415 Whole Egg Powder with a reported value for magnesium (305 ± 27) mg / kg in mass; in the three cases, the bias obtained, on average, was -0.0014 mg/L. Discussion: 46 foods selected from the Costa Rican food basket were analyzed, fresh or cooked in the usual way of consumption, without adding additives. Foods containing magnesium were: legumes (chickpeas, lentils, black and red beans), grains and cereals (white and pre-cooked rice), dairy products (whole milk powder, mozzarella cheese, fresh cheese), vegetables (sweet potato, garlic, sweet plantain), grains (beans, lentils, chickpeas), beef (tilapia, chicken breast, loin and beef liver), fruits (bananas both creole and exportation-quality), industrial products (bread made from wheat flour as well as corn tortillas).</p></abstract>

Un tratamiento interdisciplinario de la hipertensión arterial involucra tanto la prescripción de terapia farmacológica como también de dietas modificadas, a fin de que ciertos nutrientes sean provistos, debido a que se conoce científicamente que guardan relación directa con la etiología y tratamiento de la hipertensión arterial como es el caso del sodio y el potasio. Dietas como la dieta DASH (Dietary Approaches to Stop Hypertension) brindan una serie de recomendaciones que promueven la reducción de presión arterial, las cuales son factibles y fáciles de alcanzar, y conjuntamente con la modificación en estilos de vida (actividad física, regulación de la ingesta de alcohol, etc) logra mejoría en la condición del paciente hipertenso. Programas de educación nutricional deben promoverse no sólo para el tratamiento de la hipertensión arterial, sino también para su prevención, de modo que desde edades tempranas los niños y jóvenes adopten estilos de vida y dietas saludables que prevengan la aparición de enfermedades crónicas.</p></abstract>
<abstract abstract-type="short" xml:lang="en"><p>Dietary therapy has been proven not only to the prevention of hypertension but also for their treatment. An interdisciplinary treatment of hypertension involves not only the prescription of pharmacological therapy but also changes in the diet, so that some nutrients are supplied by it, which is scientifically known that are directly related to the etiology and treatment of hypertension such as sodium and potassium. Diets such as the DASH diet offers a series of recommendations that promote the reduction of blood pressure, which are feasible and easy to reach and in conjunction with the change in lifestyle (physical activity, alcohol consumption, etc) to achieve improving the status of the hypertensive patient. Nutritional education programs should be promoted not only for treatment but also for its prevention, so that from an early age children and young people adopt healthy lifestyles and diets that promote not only the prevention of hypertension, but the emergence of chronic diseases.</p></abstract>

Se desarrolla en la presente revisión bibliográfica una crónica de los principales avances en la promoción de la salud y la prevención de la enfermedad a partir de las entidades no transmisibles que se exponen en para Costa Rica.</p></abstract>
<abstract abstract-type="short" xml:lang="en"><p>The modification of determinant factors for the development of chronic diseases such as pandemic Overweight-Obesity, Diabetes Mellitus, Hypertension and Dyslipidemia permit from the perspective of management and health management, a shift towards benefit in the indicators of population health, which will affect the cost per visit due to the large number of patients that must be addressed by the chronic diseases of unknown etiology. It is developed in this literature review a chronicle of the major advances in health promotion and disease prevention after non-transmissible to set out in Costa Rica.</p></abstract>
